* 1 (15 oz) can of black beans, rinsed and drained
* 1 (14 oz) can of corn, drained
* 1 (14 oz) can of diced tomatoes
* 1/2 cup chopped red onion
* the juice of one lime
* 1/3 cup Extra Virgin Olive Oil
* 1/3 cup red wine vinegar
* Pinch of Salt and Pepper
* 1/4 cup chopped cilantro (optional)
* 1 avocado, diced (add that when you're ready to eat it)
Directions
In a large bowl, mix all of the ingredients in order listed (except only add in avocado when you're ready to eat it). Cover and chill until you're ready to eat.
