Ingredients:
Casserole:
- 3-4 medium sweet potatoes
- 1/4 C melted butter (use butter, NOT margarine)
- 2 eggs
- 1/2 C evaporated milk
- 3/4 C sugar with a dash of cinnamon added to it
- 1 tsp vanilla
- 1/2 C crushed cornflakes
- 1/2 C chopped nuts
- 1/4 C melted butter
- 1/2 C light brown sugar
Directions:
- Mix all of the casserole ingredients together in one bowl.
- Mix the topping ingredients together in another bowl.
- Beat well.
- Pour into buttered dish.
- Bake at 400 for 15-20 minutes.
- Reduce heat to 350.
- Add topping.
- Bake for another 15 minutes.
